Back 2 School

I cheated & just used cardstock, chalk & my glue gun.

We shared After School Snack Ideas.

Peanutbutter Fingers- Wreatha Stephens
Cream together:
1/2 c butter or margarine
1/2 c sugar and 1/2 c firmly packed brown sugar  ( can use just 1 c brown sugar or unprocessd cane sugar)

Blend in:
1 unbeaten egg                 1/3 c peanut butter
1/2 tsp. soda                    1/4 tsp. salt
1/2 tsp. vanilla

Stir in:
1 c flour (white or fine grounded whole wheat)
1 c quick cooking rolled oats

Spread mixture in a greased 9 x 13 inch pan.  Bake at 350 degrees for 20-25 minutes.  Sprinkle while hot with 6 oz of chocolate chips.  Let stand 5 minutes before smoothing out melted chocolate with the back of a spoon or spatula.  Mix 1/2 c powdered sugar, 1/4 c creamy peanutbutter,and 4-6 Tbsp of evaporated milk; add more milk if necessary to drizzle mixture over cookie bar.  Let it cool and cut into finger length bars.

Cheesy snakes and caterpillars- Wreatha Stephens
1 1/4 cups self-rising flour
1/2 teaspoons salt
1/4 c margarine
2/3 c cheese, finely grated
1 egg and 2 TBsp milk beaten together
Raisins or olives for eye

A bottle top for cutting out caterpillar parts (1 inch circle)
Mix flour, salt and margarine until crumbly,  Add all but 1 TBsp grated cheese to the mixture. Save the TBsp of cheese to sprinkle on later. Stir in cheese. Save a TBsp of egg mixture as well and put the rest into dough and stir.  Roll out dough on floury surface to 1/4 inch thick.  Cut 1/2 dough with a knife into long strips.  Pinch one end of the strip into a point for a tail and flatten the other end for a head to make a snake.  For a caterpillar cut out circles of dough then overlap them to form a wiggly line and pressing the edges down.  Brush your snakes & caterpillars with the egg mixture and sprikle them with cheese.   Put on their eyes and bake them on a greased cookie sheet at 400 degrees for 8-10 minutes.
Yummm.


If you need your snack to be made earlier in the day.  This is a good one with peanutbutter and oatmeal for nutrition and sugar for energy. Add a glass of milk and this will keep them going until supper.


Banana Boats –Wreatha Stephens

Take an apple (peeled or unpeeled your preference) Cut it into 8 slices and core.  Set the slices peel side down so they look like boats.  Cube a banana and wash up some grapes.  Take a toothpick and stab it in the middle of your boat,  Put a chubby slice of of banana next on the toothpick and top it with a grape.  It looks like a boy in a lifejacket sitting in a canoe.



Pizza Bites- Holly Davis
1/2 cup Grated Parmesan Cheese
1/2 tsp Italian seasoning
1 can buttermilk biscuits
10 cubes mozzarella and cheddar cheese
3 TB spoons butter
Any kind of red sauce


Mix Parmesan and Italian seasoning bowl
Separate and flatten biscuits.
Wrap dough around cheese cubes (pinch end so cheese doesn't fall out )
Roll in butter and then Parmesan and Italian
Bake 375 degrees for about 25 minutes or until golden brown.

Serve with marinara sauce.








Cream Filled Strawberries- Holly Davis

20 strawberries
1 cup milk
1 pkg instant vanilla pudding
2 cups cool whip
1/4 tsp. almond extract

Wisk together milk and pudding until thickened fold in cool whip and almond. Wash and cut the tops off the strawberries and then cut an X on the top so they open a little bit. Pipe the filling into the cut strawberries. Chill until ready to serve


Apple Dip-Holly Davis

8 oz. cream cheese softened
1 cup packed brown sugar
3/4 tsp. vanilla


Beat all together well and serve with apples.

*Also good with crumbled Heath Toffee bars


Fruit Salsa & Cinnamon Chips- Holly Davis

2 apples (1 red, 1 green) peeled, cored, and diced
1 c strawberries, hulled and diced
1 c kiwi, peeled and diced
2 tbsp brown sugar
2 tbsp raspberry jam

Mix all ingredients together. Add more brown sugar to taste if you like it sweeter. Serve with Cinnamon chips. Slice flour tortillas into triangles or squares. Spray with water or butter flavored cooking spray. Sprinkle with cinnamon sugar. Bake at 475 degrees for 5 minutes.

I used a pretzel for the stem and “Rips” for the leaf, I found the Rips @ Walmart.

Keep a Homework kit in your car, include anything your kids need to do homework that way on your way to dance, soccer, or just running around in town your kids can get their homework done while waiting.

Each box will hold all that school work clear through their senior year in high school. Then I can simply hand the kids their crate when the leave home (instead of sacks and bent up cardboard boxes like I have).”

  • You can buy these crates in various colors at Wal-Mart for 5 bucks.
  • I used 1 1/2 inch ribbon and it fit the holes perfectly.
  • I bought these nicer color files at OfficeMax (aren't they much prettier than the dull green ones?) sidenote: they were the store brand

And besides being super cute, they stack well. I will finish them off with their names in vinyl above the bow.
